I have never been particularly impressed with the over the top flavor of black teas. They seem to me to be the tea a little too close to coffee in some cases (see Twinings Vanilla Black Tea). Some are flavored and they’re so much less fussy than greens and whites (which I’m sure is why America fell in love with them). That being said, I’ve recently been impressed by Ceylon teas. They often have a very unique spice that is certainly refreshing compared to the run-of-the-mill plain Darjeeling blacks.
I added boiling hot water to the Ceylon Sonata leaves waiting in my bodum. Like most black tea leaves, the Ceylon Sonata need a rather short steep time (3-5 mins). I took a taste after about three minutes and then steeped again for another minute. The tea had a beautiful dark amber color and the aroma was subtle and light, a rarity for black teas.
Often, I find that black teas lack the subtle flavor of the more delicate teas. This was not the case with Ceylon Sonata. After a good long steep the flavor was crisp and light. Although, there was not much of a finish (more of what I’m used to from white and green teas), the flavor was so pleasant and light that I couldn’t help but drink the whole bodum myself. Would I say that there was a sonata in my mouth? Not quite, but perhaps a jazz trio.
Although I’m still a white and green tea person, I could certainly see myself moving more toward black Ceylon Teas. They have a spicy flavor and this particular variety was less over-the-top than many of the black teas I’ve tried. I’ll certainly explore Sri Lanka’s rich variety of teas a bit more.
