adagio-oolong-8.jpgAs practically every Tea drinker knows teas are generally classified into four groups. You have Black tea, which is allowed to oxidize fully before being dried and sold, then you have Oolong which is allowed oxidize slightly and is then fired to stop the process, this is followed by green tea which is fired to prevent any serious oxidation, and finally white tea which is prevented from any oxidation and is often grown in the dark so as to make the leaves literally white. This method of classification has more to do with the level of oxidation than flavor however.

Adagio’s Oolong #8 is a study in the flaws inherent in the system. Although mild, it definitely has a black tea flavor. In fact you’d be hard pressed to identify it as anything other than a black tea if you hadn’t seen the leaves ahead of time. The liquor was dark and the flavor was sharp and slightly tannic. The only way I knew this wasn’t a black tea was the way in which it held up to multiple infusions as a black tea never could. Even by the third infusion the flavor was still present if mild. I tried this tea both infused at the temperature and time I’d use for a black tea and that I’d use for a green tea (212 degrees F for 5 min, and 170 degrees F for 3 min respectively) but it still tasted strongly of black tea. It would be the perfect flavor for someone who usually avoids black tea because of the tannic bite as this bite lacked any teeth to speak of. I enjoyed it, although I certainly wouldn’t consider it a favorite of mine.
