"This has a medium-light body on the tongue, very smooth, leaving a really clean feeling in your mouth without being dry or bitter... just a wonderful Assam."

Assam is a very unique tea when it comes to flavor. When you’ve tried a few Assam teas you could pretty much tell right from the first sip if a tea is an Assam. Generally a good Assam will have a malt taste to it with a well balance of briskness and body. Assam by itself brews a nice coppery color but it is often used in a lot of blends or breakfast teas. I have also noticed it is a common tea used by restaurants as their “unsweetened tea”.
The Assam Choice Estate from Mighty Leaf Teas is a black tea out of the Satrupa estate in Assam. I’m always surprised when the brewing parameters of their tea call for 1 teaspoon per 12 oz. of water which I can’t see any tea turning out good like that. I suppose since most of the teas the have are a bit more expensive they want you to stretch them out. I used about a teaspoon per 6 oz. of water and found that to be a pretty good. I brewed for 3 minutes and poured out a wonderful copper liquor, not as dark as the picture on their website though. I probably could have gotten it as dark but that would call for a longer steep which I felt made the tea bitter.
Brewing with the parameters I mentioned above the tea was wonderful. The Assam is amazingly sweet by itself and I think adding anything might make it too sweet. It has a medium-light body on the tongue, very smooth, leaving a really clean feeling in your mouth without being dry or bitter.
This is just a wonderful Assam. It might not have the punch that you’re looking for in a good tea to have for breakfast; this one is quite a bit mellower. You might want to go with a Yunnan or Golden Monkey if you care for something a bit stronger. This tea I can see as a great one for everyday use anytime you like. I would enjoy drinking this with a meal or even as a desert.
