Ding Dong refers more to a method of oxidation and less to a place (or to a person.) Its one of the most famous oolongs from Taiwan. The 2nd infusion tasted fuller and had a bite that was almost spicy. I could see where they might find a roasted chestnut flavor, but I found it more like the plain popcorn flavor from before. The second flush was definitely more like an oolong than a green. The difference between the steepings was very distinctive and makes this an interesting tea to drink.
