Mighty Leaf's Mountain Spring Jasmine is quite an interesting tea. I actually prefer the aromatic qualities of this tea more than I do the flavor of the tea itself. That isn't to say I don't enjoy a cup of this tea on occasion, I just absolutely love taking in the pleasant scent of the Jasmine flower. Mountain Spring is a wonderful name for this tea that fits well. This tea tastes like a bit of fresh spring.Once carefully steeped will produce a light see through pale green cup. Be careful not to over brew as I did the first few times of making this tea. I tend to usually steep my teas to the maximum suggested serving directions, and sometimes even longer. I noticed the pale color and assumed I would need to steep longer. When I did that I noticed that this tea was very bitter. I now steep this tea for under 2 minutes compared to the 5 minutes I had first tried. There is a huge difference in taste.
I prefer to drink this tea with little to no sweetener, and served piping hot. This tea is so delicate, that to me sugar overpowers the flavor. If I should happen to steep a bit longer than preferred, I will add about a teaspoon of honey to 6 ounces of steeped tea.
I am not a true die hard Jasmine tea fan, but my daughter is. She absolutely raved about the quality of this tea, telling me it was the best she has ever tried. I see a gift basket with this tea included in the near future. We enjoyed our tea for breakfast, paired with a bowl of old fashioned oatmeal and fresh cut fruit. This tea really hit the spot. I think it makes an excellent breakfast tea, or an after dinner dessert tea. It is very light, and will compliment most desserts in my opinion.
