For my first cup, I tried to enjoy the tea plain. While I would describe it as delicate and smooth, it still had slight bitter taste. This seemed to diminish as the tea cooled (much to my surprise). What surprised me most was the aftertaste which was extremely clean. I would say I enjoyed it more than drinking the tea.
For my second cup I decided to bring out the half and half. What a great tea! The half and half removed the slight bitter taste (I donʼt use sugar) and created the sensation of hot chocolate with melted marshmallows. I say sensation because I am not talking about the flavor, but the texture. And I included the marshmallows to indicate that soft creaminess that until today I had only experienced drinking hot cocoa.
It was my third cup when I really realized what a truly fine tea this is. I made the mistake of brewing the tea for only 3 rather than the suggested 5 minutes. It was still great! Although I am using a digital timer and infrared thermometer to prepare tea exactly as recommended, I like knowing my tea that has some latitude for error.
