teafortewhitegingerI thought ginger and pear seemed an interesting pairing with a white tea. A spicy ginger is not something I would link up with a mild white tea in my mind. This tea is meant to be served iced, and I brewed the sample in a 32 ounce iced tea pitcher.

White tea and other herbs form the bulk of this blend, and the tea appears to be cut and sifted a bit. Lots of big chunks of spicy dried ginger punctuate the blend along with occasional delicate blue mallow petals. I heated my water to about 180 degrees to brew this sample (teaforte.com recommends 175 degrees). Using a bit over a tablespoon of tea and 32 ounces of water, I allowed the tea to chill overnight.

Enjoyed cold, this tea has superb flavor. It is full and honey like with a touch of a nearly vanilla taste in there as well. The ginger fulls up the underside - gently spicy at first and then mellowing to a lingering sweetness that stays with you awhile. The pear is perhaps most notable in a subtly sweet sense and is not overwhelming, but pleasantly sweet. The tea holds up well for multiple infusions, the sweetness of the pear fades after the first infusion, but the white and ginger marry nicely and carry on for at least three fine infusions.

While this makes a fantastic tea for summer brewing over ice, I can't help but think it would be excellent served hot too. It would make a lovely pairing with a fall fruit based dessert - perhaps a pear or apple tart. Mmmm. This tea is complex enough to make you sip slowly and consideringly. Seems just right for the waning days of summer.
