californiadarjeelingCalifornia Tea House has offered so many delicious teas that as of late, they appear to be a force to be reckoned with in the tea community. CTH appears quite proud of their Darjeeling offering. It is the only Darjeeling in their catalog, which mimics the company model to date. They offer only one Earl Grey, only one Chai, and so on. Their black tea selection is limited to just 7 teas, but of those I have tried, they are all exquisite.

The Organic Darjeeling on offer here is a 2nd flush variety. It is certified organic by the USDA. The dried leaf aroma is subtly sweet, which CTH indicates will appeal to those with a love for dessert wines. I can definitely see this connection. The leaves are semi-broken and contain a nice mixtures of brown hues, and a very slight peppering of white tippy buds.

Within seconds, the liquor forms up a nice amber color, which develops into a lovely, deeper shade upon full steep. CTH recommends a full tablespoon, steeped with boiling water at 3 minutes. I initially balked at this, and brewed about half the amount of leaf with slightly cooler water. The results were satisfying, but I then tried it at the recommendations given. The results were definitely much richer - akin to the difference between watered down off-brand grocery store coffee and a rich, bold, gourmet coffee shop cuppa joe. A chocolaty, malty taste is present and just the right touch of that famous Darjeeling astringency.

Utilizing the 1T of leaf and 3 minute steep, this also produces a more satisfying second cup/steeping as well. While not as bold and rich as the first cup, a second cup is about equivalent to that first cup I brewed using less leaf and cooler water. As such, I would definitely recommend the latter method.
