White tea is often called the champagne of teas, but this is a bit of a misnomer. Where champagne is vivacious and bold, white tea, the least oxidized sort, is subtle and demur. There is little fragrance to speak of, and the flavor is often so stealthy that the untutored palate may miss it altogether.Some white tea is distinguished as “white” due to a covering of downy white hairs. Not so with Peony. These slender, open leaves and buds, early spring-plucked in Fujian Province, are dark, almost black, with about 8% oxidation. The sample in hand had a vaguely sweet hay aroma.
I steeped two generous teaspoons of the tea in one cup of 175F water for two minutes. The resulting liquor was a medium artichoke green, with little fragrance apart from a cooked vegetable scent that I found not particularly alluring. The flavor of the first sip, however, more than made up for that. Second and steepings of two minutes produced a darker liquor, with a vegetal fragrance and a slightly more vegetal flavor, with a lingering, mouth-watering sweetness. “Light” is the word that keeps coming to mind. This is a very thirst quenching tea.
This is a very nice tea at a good price, given its excellent multiple infusion performance. Highly recommended.
