Their Golden Monkey offering is naturally my first choice to opt for. Aroma-wise, this is a bit unlike other Yunnans. A gorgeous, sweet, honeyed nose accompanies the usually-prevalent (but not so pronounced, here) earthy and mushroomy scents. The leaves are magical in appearance - an otherworldly orange/gold tan hue, just the right touch of dust-coating, and feathery lightness. Once brewed (I utilized sub-boiling water for a 2-3 minute steep), the initial sweetness takes a backseat to the umami savoriness - both on the nose and in the cup. The flavor is divine, as expected. Ripe and delicious, there are not really any surprises in this Dian Hong as compared to any other quality Yunnan Gold or other related Yunnan teas of this caliber. The flavor is quite light though, as compared with some other richer brews, and so I suggest a 3 minute steep as opposed to the 2 minute mark. Potentially one might opt for even a 4 or 5 minute steep, but I personally like to keep it between 2 and 3 minutes, as it allows for an equally delicious second infusion of the leaves without giving up much of the wonderful flavors. In fact, a third infusion is also quite fantastic as well, and it holds up well to three infusions at the 2 minute mark perfectly.
