|"Coarsely chopped chai masala ready for a nice long overnight brew."|
I'll say right off the bat that due to an unprecedented amount of running around lately I didn't get a chance to try the overnight steeping method recommended on the website, Rather I simmered the herbs for five or ten minutes, then added white sugar to taste, then added milk and simmered further shooting for that magic time before the milk boiled over. My method is one I've used time and time again for years, either my indian friends have been exceedingly nice, or its reasonably traditional and not out of the norm.
It brewed up nice and fragrant, a carmel brown cup of sugar spice and everything nice if I've ever had one. The presence of large amounts of cinnamon and black pepper gave the cup the sort of kick often lacking, and the other herbs filled their roles admirably. While I didn't notice an unusual jump in energy, I was a bit travel-lagged so that may be a Factor. I could detect a little coriander so I presume the bag sent to me was subject to the recipe change mentioned here. Not a bad thing at all, and there was still significant visible cardamom pods.
Definitely recommended, and their suggestions for longer simmer/steep times are entirely realistic for the eternally busy as they also recommend making it in large batches at the start of the week to be microwaved for your daily cup.
