My sample of this tea just exudes high quality and freshness, both of which I've come to expect from Canton Tea Company. The leaves are large and fluffy, coming in various shades of chocolate, chestnut, olive green, tan, and of course, the silvery tips. I was quite impressed with the large leaf size, and even more so during the infusion when the leaves opened up and expanded throughout my brewing vessel. I prepared my first cup of this tea using sub-boiling water and a three-minute infusion, which turns out to be just what the Canton Tea Company website recommends. This tea's flavor is very fresh. Crisp muscatel notes were followed by a fruity/citrus flavor that delivered an almost-bitter zing. The tea had a complex flavor, yet was aslo smooth and easy-drinking. I did enjoy the kick that was present in the aftertaste. Even though the leaves to expand quite a bit during infusion, I would recommend experimenting with larger amounts of leaves than you might normally use, as this tea does have the potential to be perceived as being too weak or light in flavor.
I put the leaves through a second infusion, which is not always something I do with second flush Darjeelings. This time I used sub-boiling water and a four minute infusion. The tea appeared very similar to the first brew, however the flavor was very different. The citrus zing was noticeably missing and the flavor was characterized primarily by earthy and roasty notes. I personally preferred the first infusion, but I did appreciate that I was able to get 2 decent, yet different, infusions from the leaves.
The Canton Tea Compayny website states: "We only have a few kilos and then there is no more available – anywhere". This was a pretty decent tea and I would certainly drink it again and recommend it to others. If this tea interests you, you better grab some before it's all gone.
