Just looking at the blend of tea and spices in my sample tells me that I am headed in the right direction. Wiry Assam leaves are combined with whole cardamon pods and cloves. I can pick up the cinnamon in the aroma. Just the scent is enough to make my mouth start watering.
I set it up to brew using five teaspoons of leaves, a water temp of 205 degrees and a steep time of 3 minutes. The resulting liquor is a rich reddish brown in color with the decadent aroma of cloves and cinnamon.
Now for the final test. Because this is a chai, I made my cup up with rock sugar and half-n-half. The taste is ambrosia! Just like what I get from my Indian restaurant. The taste of the cloves dance nicely with the cardamon and cinnamon. The Assam makes a great base and stands up well to the spices.
This has to be one of the best chais that I have ever tasted. I know that Davidsons Teas has just aquired a customer for life.
