There was a time about 20 years ago when all I really knew of black teas included Earl Grey, Irish Breakfast, English Breakfast and Darjeeling. Each had their own place in my stockpile, and I would rotate through them, "rediscovering" each now and then as I came to realize each tea's nuances. Irish Breakfast was probably the first tea where I felt the light bulb go on one day. My palette apparently became more refined whereby the malty flavor of Assam just clicked with my taste buds. That moment may have really defined my active interest in tea that has only increased ever since then.

Culinary Teas' Irish Breakfast blend includes the traditional Assam component - in this case, second flush Assam. The tea is then apparently shipped to Kenya, where they blend it with Kenyan black tea (from February and August harvests). The dried blend is CTC (cut-torn-curled), which gives the tea a deep brown mini-Grape Nuts-like appearance. The aroma is bready and semi-sweet.

A 3-minute infusion reveals a bright, coppery cup. This is a good, strong, and full-flavored Irish Breakfast tea. The bold astringency comes shining through even at a minimal steeping time. Notes of lemon are evident, and it takes very well to cream and sugar.... or Bailey's. It also serves well as a full-bodied iced tea for super-refreshing afternoon guzzling/sipping.

Each Irish Breakfast I've encountered seems to be different - almost always a blend of two teas, one of which is Assam, but the other can be anything in the black tea realm apparently. I like Culinary Teas' take on this classic, and the selections utilized here make for a nice blend.
