Jasmine pearl teas are pretty brilliant. Any tea whose leaves are tightly bound (rolled oolong, gunpowders, pearl teas) tend to stay fresher longer than their counterparts because less surface area of the leaf is exposed to the air. This is especially useful for a tea is delicate as a jasmine. It's also easy to measure. Just grab a pinch of pearls, and you can easily figure out exactly what your favourite leaf to water ratio is. I'm a 10-15 pearls per cup kind of gal, personally.

So I throw 12 pearls into 8 ounces of 180° water for three minutes. It's lightly aromatic with a pale yellow liquor. It's unbelievably delicate in both scent and flavour, but it's brilliantly balanced with a pleasant jasmine aftertaste. It has a creamy base, but it's more like skim milk that 18% cream, so it balances with the mild floral flavour nicely.

My three minute second steep holds up beautifully. The leaves have unfurled, giving the tea a stronger creamy note with a slight smokiness. I prefer the first, but this is a nice follow-through.

This is easily among the best jasmine, let alone jasmine pearl, teas I have ever had. Its simple elegance leaves me wanting more once my cup is empty. And since it's from Mark T. Wendell, it's got an extremely accessible price tag. Definitely something I'd buy.
