The aroma of the leaves are sweet, floral and hay-like with colors of light and dark greens mixed together in tightly rolled leaves. The brewed aroma reminded me of a grilled summer squash.
I brewed 1 teaspoon of leaves in about 2 ounces of water in a gaiwan, a small lidded bowl used for brewing tea in small batches. By using short, multiple infusions you get to enjoy each unique flavor of the leaves as they unfurl. Compared to European style brewing, a long 2-3 minute brew and taste.
I brewed this Jade oolong at 190 F, the first brew lasted about 45 seconds. The taste is so creamy and sweet, thoughts of enjoying this cup with grilled salmon sounded perfect. The second infusion at 1 minute had a little tang to it. The third infusion coming in at about 1:30 was very sweet and creamy as the first but slightly dry.
