mountainoolongspringMountain Tea specialises in high mountain Taiwanese oolongs, my favourite genre of tea. I've ordered from them before, and I've been very happy with everything I've tried from them. This gao shan is no exception.

I steep 2 teaspoons per cup at 195° for 30 seconds. It smells creamy and fruity with a hint of mineral. It's beautifully mineral, creamy, vegetal. It's perfectly balanced with a nice mineral aftertaste.

My second steep is a brilliant follow-up. It's more mineral and vegetal than anything else. The aftertaste is heavy and coating, leaving a lingering vegetal taste.

By my third, 90 second steep, the cup is starting to mellow. It doesn't have the punch of the first two steeps, and by this point I'm ready for the calmer cup. I pull out two more steeps after this one. It's really good and really affordable. The sort of thing I'd buy by the pound.
