My oolong today is one from Canton Tea Co that is an Ali Shan with a beautiful aroma. Predominantly a floral aroma, there are also hints of stone fruit and fresh cut grass. The leaves themselves are tightly rolled and range in color from a gold to olive.
I set them up to brew using 195 degree water and a steep time of 2 minutes. The resulting liquor is a honey color with the floral aroma still coming on strong along with ones of apricots and brown sugar.
This tea is nicely complex starting off with a sweetness from the flowers as well yams and brown sugar. Turning next to hint of minerals and copper. There is a sweet aftertaste that lingers and lingers. As the tea cools, I am also able to pick up hints of peaches, tobacco, caramel and sweet popcorn. What a taste sensation!
I was able to resteep this tea three times with great results each time. This has to be one of the best examples of a floral Ali Shan that I have ran across. I highly recommend picking some up for yourself.
