Dry, the aroma is woody with wild green under notes. Brewed, there is a delicate honeyed edge that slides along your taste buds. Furthermore, there are apricot notes as you inhale the tea’s aromas while taking a drink. All in all, it nicely comes together to create a hot drink that is as sapid as it is healthy.
An interesting note, off the teayama website, “In the early summer months before harvest, these leaves are left untouched to allow native insects, known as leaf-hoppers, to make their bites, stimulating a natural defense, the tea leaves excrete a natural insecticide, which enhances the teas flavor and aromatic sweetness. The tea then undergoes thorough hand-processing and fermentation, resulting in deep red and brown twisted leaves with silver-white tips.”
