|"Upon pouring boiling water through my infuser, the pearls very slowly unfurled to reveal long, black leaves that infuse one of the most interesting and beautiful black teas I've ever tasted.
Typically, black tea can get bitter easily, so I followed the three minute steeping instruction, however, I had to steep the leaves another two minutes to get a full depth of flavor from this brew. The tea is smooth and delicate while at the same time strong in exquisite, clean flavors. This tea smells of chocolate and caramel and tastes smooth, like coconut oil with spices and caramel. It's also a very golden caramel color, keeping in the same vein as all the other nuances of this tea. It is perfectly balanced, with smooth, bold nuances dancing across the palate in harmony.
What I've learned having tasted more than one offering from Canton Tea Co is that balance is important to the company. This one, Yunnan Gold Pearls come from the Feng Qing Mountains in Lincang, China. The tea was harvested in spring 2012 and calls to be savored.
