Tie guan yin is a semi-fermented tea. Also making oolong tea is complicated as well as takes a lot of skill. plucking tea leaves (caiqing), sun withering(shaiqing), cooling(liangqing), tossing(yaoqing), fixation(shaqing), rolling(rounian), drying(ganzao).
