drinkleafwhitepeonyDrink The Leaf's White Peony offering is a mixture of open leaf, a bit of twig and a few fuzzy buds with a sweet smell and colors ranging from white to gray green to dark brown. The dry leaf has a sweet, light taste and the smell of a white tea. The scent has a faintly astringent closing.

I used water heated to 180 degrees and a three minute steep to brew this tea. The nice sweet scent of the brewing tea carries over clearly in taste. There's a bit of a bite at the end of each sip that isn't merely astringent but "astringent plus." The astringency is more of a perky toasty dryness that makes my husband say "Oh! That's good!" and makes me begin a dreamy pondering about the drying processes used when handling and harvesting this tea.

I can't say I can really wax eloquent about this particular tea. It's a nice offering of White Peony. It would be a fine cup of tea to choose for the afternoon or after dinner, when you'd like something to perhaps maintain alertness but not get you too jazzed up. The tea is fresh and uplifting, sweet and clear with a good clean taste and without any fuss. Something about the finish is very appealing to me. It's not super smooth and doesn't fade away too soon. Sometimes white teas can be almost too mild. This one isn't harsh at all, but also isn't forgettably mild. The finish has a bit of a rasp to it, giving it a bit of voice, so to speak. I guess I'd say that the bit of rasp to the finish is what made me like this tea. Perhaps the raspy finish to the voice of this tea isn't perfect, but it engages my senses similarly to the way that a female vocalist like Stevie Nicks does. Ponder that. Hopefully it makes some sense!
