kteaslogoI will admit that I was a skeptic of KTeas after my first endeavour with their tea line, but this tea may have persuaded me to be a bit more kind and open minded. First off, I adore all peachy things, though I haven't found a tea that does peach to levels that wow me... until this one.

There was a clever and logical designer behind this blend, there is no doubt. The base is a yellow tea from the Wuyi Mountains of China. Yellow tea is profoundly similar to green tea in nearly every way. The one difference is this: yellow tea is allowed to ferment for a longer period of time, and the drying process for yellow tea is slower, intentionally more drawn out than green. As a result, the yellow tea loses the robust vegetal nuances and settles comfortable between oolong and green in the fermentation process.

This tea brews a golden yellow and wafts off juicy peach tones as it brews. The first time I made this with a dear friend who is being familiarised to tea, and I added a dab of organic honey to our brew. (Generally wouldn't do this as a traditional purist, but friends come before tea). The honey really accentuate the flavours that I have experienced in the non-tainted cup. The peach comes off as ripe, nearly a fuzzy taste, which is wonderful to have such realistic sapidity. There are also sunflower blossoms which were most likely added for appearance and not flavour, which I do not object to because I believe that tea should pleasantly engage all of the senses. There is an indigenous sweetness to the tea that rounds this mix off with a dainty and enjoyable finale. A wonderful cup for a gentle spring day.
