I had been suffering with a slight cold and flu when I visited my favorite organic tea shop in Chinatown, New York yesterday.  With a large variety of quality organic teas and tisanes, and a wonderfully helpful owner, this has remained until now one of my 'hidden gems' in New York's burgeoning tea scene. While sharing a cup of tea, and probably my flu germs, Lorna suggested I try her Warm Your Heart tea, one of her signature organic blends that she mixes and sells in the shop. The blend contains a beautifully attractive mix of organic white peony leaves, rose, lemongrass and linden flowers and leaves, which she explains help to break up mucus (and a unique tisane which I haven't tried before!).  Close your eyes when you take in the fragrance of this unique mix and you'll swear you're standing in the middle of a garden, breathing in a fresh grassy and floral aroma. Given this blend uses white tea as its base, I used 2 heaping teaspoons per each 6 ounce serving of 160F water. I let it steep for at least five minutes, or until I achieve the beautiful golden color Lorna showed me in the shop. The honey sweetness is instantly soothing for my sore throat. And the delightful rose flower notes leave a refreshing feeling in my mouth. This tea has a nice mouth feel, without any bitterness or astrigency, perfect for anyone in need of a good tea remedy during cold and flu season.
