jingwhitepeonyI've been drinking quite a bit of white tea lately, so when my sample of Jing Tea White Peony arrived it was granted instant VIP access and bumped to the top of my tea list.

Upon inspection the dry leaves look very attractive, with plenty of white furry down. Jing Tea recommends steeping 1-2 tablespoons of this white peony at about 160F, a little lower than what I usually steep a white tea at, but I dutifully carry out my orders.  And I'm glad I did. After three minutes, its pale gold liquor is refreshingly light, but with velvety honey sweetness as promised. And it only gets better. After five minutes of steeping this tea reveals an amazingly smooth mouth feel, its thin golden liquor intelligently disguising a smooth honey taste on my tongue which leaves refeshing cucumber notes in the back of my mouth and soothes my throat with its silky feel.

After a cold spell here in New York, this tea feels wonderful on my sore throat. In fact, I don't think I'll bother adding honey to my tea, I'll just make another cup of white peony.
