After a cold November morning walking the streets of New York,  I arrived home with that holiday-inspired craving for a warm, soothing drink. I instantly knew a cup of chai would hit the spot.

Upon opening my sample of Culinary Teas Chai Rooibos, that wonderfully fragrant aroma of traditional chai spices, including ginger, cardamom, coriander, cinnamon, cloves and black pepper already has me salivating. I prepare my chai according to their recommendation, 1 teaspoon per cup steeped for at least five minutes. I also fill my cup about a quarter full with milk. Slightly bending the rules, I don't add any sugar to the milk as suggested as this makes the taste too sweet for me.

After steeping for about seven minutes in my teapot, I pour my beautiful red chai liquor into my cup and give it a stir. The sweet alomost cherry-like flavor of the rooibos is a nice compliment to the heavy chai spice notes. In fact, the fragrant aroma of the dry chai mix on the nose is quite deceiving. When mixed with milk, this chai is sweet and subtle. Overall it's a wonderfully creamy and smooth drink, perfect for satisfying my afternoon craving. Having made plenty of chai though, my only disappointment is with the preparation method. The combination of cold milk and chai that's steeped for seven minutes is lukewarm at best. So if you're in the mood for a warm winter treat, remember to heat the milk as well.
