"This blend is for all the lemon lovers out there! We have bended green rooibos, lemongrass and lemon peel with just the right touch of lemon and cream flavor." ---The NecessiTeas website.

It is no secret that I really, really enjoy two things when it comes to tea: really high end leaf and dessert teas. Lemon Chiffon is a dessert tea that became one of my staples pretty much from the first sip. The ingredients in this blend are green rooibos, lemon peel, lemongrass, vanilla chips and cream flavoring. It is just plain deeelicious. For those that are unfamilar with green rooibos, it is the unroasted cousin to red rooibos but tastes nothing like red rooibos. It has a much milder flavor that is more reminiscent of a mild (not vegetal) green or white tea. Now that SpecialTeas has went out of business, this is my answer to their Lemon Chiffon blend. Though their version was made with red rooibos. In my opinion, the flavor profiles are similar---and there are reasons while SpecialTeas won a number of awards for that blend.

When I prepare this blend, I pretty much never drink just one cup. Green rooibos is forgiving just like it's red rooibos cousin and can tolerate boiling water and longer infusion times. I typically go with boiling water and 5 min. Lemon Chiffon has a pretty full flavor profile that is dominated by a sweet (not tart) lemon flavor with a mellow creamy vanilla backdrop. It is the delicious epitome of lemon and cream. This one is kind of naturally sweet so be careful not to oversweeten. I have also tried variations of this blend with a splash of vanilla cream or just plain old half & half. While the vanilla cream option is probably my absolute favorite way to drink this (so decadent), there are no losers here. This one is also good cold.

In case you haven't figured it out already, this is a favorite of mine. I love the use of the green rooibos with this blend as it really allows the lemon and the cream flavors to shine. I love this with or without the dairy. Really this isn't anything that I don't love about this. Further, I consider this to be a steal at just $10 for a 3.5 tin. The only bummer is that I haven't had it very long and it looks like I will need to restock it soon. YUMMO.

I have such a tea-crush on Linsey and The NecessiTeas. I haven’t tried this flavor, but it’s going on my next order for sure.
