Organic White Peony, or Bai MuDan, is a tea that reminds me to relax and enjoy the tea drinking experience. The flavor profile for this type of white tea is so subtle that I often catch myself straining to identify and describe what I’m tasting. Then I remember that the delicate nature of Bai MuDan is its beauty, and that it’s always better to just sit back and appreciate the subtlety. So, I take another sip this time letting Organic White Peony’s flavor wash over me relaxing my mind and body.

Teavivre’s Organic White Peony is grown on Mt. Taimu in the Fujian Province of China. This region of China is said to be particularly stunning with its majestic rock formations, atmospheric caves, and gorgeous, crystal clear rivers and waterfalls. The origin of Taimu Mountain’s name is derived from a goddess’ name, Taimu goddess. Legend is that once upon a time, a kind hearted girl name Langu lived at the foot of the mountain. She grew a kind of white tea, which was a very effective medicinal herb. With this kind of tea, she cured many patients around the mountain. To show their gratitude to her, local villagers respectfully called her Goddess Taimu.

The tea lovers and aficionados that comprise the Teavivre team have provided a similarly wonderful white tea with Organic White Peony. Organic White Peony’s leaves are bright green with a vegetal and slightly floral aroma. The infusion is an elegant, pale yellow color with a delicate floral nose. The liquor has a smooth mouthfeel with an understated floral essence. The body is very mild with subtle fruit and vegetal notes, and the finish is sweet and lingering.

I brewed three teaspoons of Organic White Peony in twelve ounces of water at 185 degrees for four minutes. The Teavivre website recommended adding extra leaf when brewing their Organic White Peony, and three teaspoons to 12 ounces of water made for my perfect brew. I enjoyed this lovely white tea without any additives and it made for a soul soothing afternoon cuppa.
