St. Nick's Surprise is a caffeine-free herbal blend (tisane) that is categorized as a "relaxer" tea under the Tiesta system. This tea consists of apple bits, raisins, almond flakes, cinnamon, roasted chicory roots. When I first smelled the dry blend, I was certain that I had had this particular blend, marketed under a different name and from a different company. However, after examining the ingredients list, I realized this tea is new to me. I could not find any brewing suggestions specific to this tea, so I used a five-minute infusion with boiling water. In hindsight, I would have used a longer infusion time to coax out more flavor from the fruit pieces, but the tea was still decent as I had prepared it. The liquid was a tannish color, not quite as dark as cider but along those lines. The scent that comes off the prepared tea is warm and rich, consisting primarily of cinnamon. The flavor, however, is true to the apple and raisin fruit pieces. The cinnamon does seem to come through first, but the underlying fruit flavors are, surprisingly, what persists. The fruit and spice combination has the same feel as, although an entirely different flavor than, spiced cider. The only thing that bothered me about this tea was that it was a bit watery and slippery in texture, comparable to tisanes that have lots of berries in them. However, in all, I did enjoy this tea and appreciated the seasonal flavors. As its name suggests, this blend does seem most appropriate for holiday or winter consumption.
