Aiya's Ceremonial Grade Matcha was an enjoyable experience, so I look forward to their higher-grade matcha, the Premium. The powder is a beautifully radioactive green colour, a positive sign for the quality of any matcha. I sift some into a preheated chawan, and it froths up beautifully, the bubbles staying endlessly. I ended up running out of tea to drink long before I ran out of bubbles.

The scent is faintly sweet and grassy with a hint of lemon. The tea is smoooooth. It's one of the smoothest matchas I have ever had, like drinking butter without the cloying taste. It's very sweet with a nice vegetal finish, and it is dangerously easy to drink. I can't handle much matcha in a sitting, and I can see myself quickly going overboard on this, leaving the taste of sweetness and regret lingering on my tongue.

It doesn't have as much character to the flavour as some matchas, so I find myself focusing mostly on this tea's brilliant texture. That and the sweetness are the main notes this tea hits. For every day drinking, I prefer a matcha with more personality and vegetalness, a flavour I can never get too much of. That being said, this isn't really meant to be an everyday matcha. You can use it for that if you want, but it's designed and priced to be appreciated during special occasions. It's not my most favourite matcha I've tried, but it's certainly one of the highest quality. If for no other reason, I recommend this tea for its texture.
