I have the exciting opportunity to sample three of Aiya's matchas: Their Ceremonial grade, Organic Ceremonial grade, and Premium grade. I have decided to start with the cheapest of the three offerings, which is their everyday Ceremonial Grade Matcha. Once I open my sample packet, the first thing I notice is the brilliant, vibrant green colour. It is a bit clumpy, but I do my best to break up the chunks with a bit of hot water before adding the rest of the water and whisking. It whisks up easily and fully, the bubbles sticking around for long enough to write this opening paragraph then drink the tea at a leisurely pace.

There's some bitterness that I don't love finding in my matcha, but the tea has a stunning vegetal flavour. There's some sweetness, though I prefer having more. It has a wonderfully smooth texture that helps make up for the bitterness. It's a decent matcha that doesn't have any major positives or negatives, which is about what you would expect for an everyday matcha.

This tea is downright good, but it's not particularly special. Personally, I already have an everyday staple matcha, and I don't feel like this is going to replace it any time soon, but this is a matter of personal preference. It's more vegetal and less sweet than some matchas, and that may be more to your liking than to mine. I recommend trying this if you get the chance because it's a solid tea, and you may find it's just your style.
