For some reason, despite the wonderful name of this tea blend from Culinary Teas, it took me a long time to reach for it in my sample collection. I wanted to have it with dessert at Thanksgiving, but missed my chance. Then I just passed it by a few times. This morning, though, I wanted a spicy sort of warming drink and I brewed up this chai blend for fun. I'm so glad that I did!!

The black tea leaves are long and wiry and studded with cinnamon chips, golden petals, cinnamon powder, and orange chunks of something that looks a lot like pumpkin skin dried and chipped. I brewed this chai like a tea, rather than steeping it in a pot like a chai. I used a teaspoon of the blend per 8 ounces of boiled water and allowed four minutes to steep with a little sweetener added.

This chai has great flavor, and it's predominantly sweet. It's got lots of caramel flavor, amazingly distinct. Along with the caramel are apple and orange flavors and a sweet spiciness that owes to clove and especially cinnomon. The cinnamon is prominent in the flavor profile and gives a definite edge of masala chai flavors, though tamed and tempered slightly and not peppery. I like all the spices; they go right along with the pumpkin and seasonal quality of the tea. What's overwhelmingly obvious in this blend, though, is a rich, sweet caramel creaminess that is really decadent and fully enjoyable. This blend really comes across as a dessert blend and would make a great tea to have on its own or alongside a rich dessert like a bread pudding.
