Novelty teas that work with more funky, out-of-the-box type of flavours and titles typically use Rooibos as the stage for their whimsical beverage designs. Rooibos is not tea - it is classified as an herbal/tisane because the plant is not of the genus and species camellia sinensis. It has no caffeine and I don't like drinking it plain. Rooibos, for my taste, needs to be a display tool to present something yummy rather than being something yummy inherently. I don't love it, I don't dislike it, it's just Rooibos to me.

This Sassafras is a black tea, hallelujah. I am just so used to having funky and Rooibos go together that having a fun-style tea on a black tea stage provides a much needed variety. I smelled the tea up in the store before purchasing, and right away I knew that this was going to end well. I brewed 1 teaspoon in 8 oz. of boiling water for three minutes. The hot tea is good, a subtle spiciness like old time sarsaparilla. There is such a familiarity to the flavours and aromas that
