The Tea District web site says that this tea should be brewed at 180˚F for 3-4 minutes. I tried 3 minutes, 3 minutes & 30 seconds and 4 minutes and only one captured the proper flavours that I really wanted out of this tea. 3 minutes and 30 seconds turned out to be the winning number. The others ending up being bland, but the right number made the sweet and fruity flavours sing.

Apples and pears don't naturally come together for me in flavour profiles, but the combination is brilliant. The textures of both fruits are very similar, but the flavours aren't, they complement each other. There's a little bit of tartness, a nice touch of fruity sweetness and a touch of fresh pear aroma. On the background of sencha green tea these flavours high all of their high notes and contrast with the deep flavours of the sencha. The whole tea is really well done, but if you don't brew it for the right amount of time it will fall flat. Points for the Breville tea maker for making this tea deliciously possible.
