When one thinks of tea in general, naturally the most common type to spring to mind is black tea. There are literally thousands of varieties and blends of black tea. Green and oolong teas are less prolific, but again, there seem to be dozens of varieties of each. When it comes to white tea though, you pretty much have your silver needle (only the very tips are plucked of brand new buds) and then you have white peony, which is one leaf shoot (aka: bud) and two adjacent leaves. The resultant tea, compared to silver needle, is a richer flavor, though still mild. OK, now that the boring lesson stuff is out of the way, you are either saying “yawn”, or “hmm, that was interesting!” depending on your knowledge of tea and/or who-cares attitude.

thepuriTea offers 3 selections of white tea: Silver Needle, Jasmine Silver Needle, and White Peony. That’s about all that most tea purveyors offer, if that. Sure there are other varieties, some rare, some boldly daring, but your two basics are covered. This particular white peony (aka Bai Mudan) is not unlike most I have enjoyed. The aesthetics are just the way they should be – a semi-broken collection of leaves and stems with hues of light greens, muted browns and tans. The aroma is sweet and mildly earthy.

A 2-3 minute brew at lesser temperature (170-180 degrees F) presents a sunny golden cup. The aroma is even more slight in the cup, but on the lips, an encompassing warmth takes over. A mild astringency coats the palate, as the naturally mild-sweetness with fruity and woody hints come through. Despite the fact that it is the middle of the summer and 95 degrees outside, I am immediately transported hearthside to a crackling fireplace in my mind. To offset this, I slightly-sweetened a small batch and chilled it for a few hours in the refrigerator, which proved very refreshing in the mid-day heat. A versatile tea for all seasons.
